Happiest Saturday to you — what have you got planned today? I’m still in my bed with a cup of fresh ginger tea, and I am in absolutely no rush to get out of bed. I’m getting my daily dose of sunshine right where I sit — the sun is truly brilliant.
There are no plans to leave my house today. I would like to do some journaling; I have an episode of a podcast I’d like to listen to and some reading.
My bedroom has become my new favorite room in the house — I’ve been spending a lot more time here. I open the windows in the morning and there it is fresh air and glorious sunshine. I’m thinking of creating a bit of a sanctuary here. I’d love to sit by the window at 5 AM and write as the fabulous birds sing their beautiful songs. I believe it will be a great space to read or write (I’ll see what I decide on later).
I made some simple blackberry syrup yesterday in anticipation of making myself a nice cocktail to accompany me during my reading a little later.
These days I find comfort in experimenting in my kitchen either with a great meal or a delicious cocktail. I’m creating a recipe book finally from my million and one index cards (I think my daughter would love this).
I wanted to create a cocktail that had a tad more sweetness than I usually like, but I also wanted to use the ingredients I have on hand.
Yesterday I found this beauty, and it’s simple and fabulous. It’s the perfect spring cocktail, and I had all the ingredients on hand. I modified the original recipe and changed the name — I will list the source below.
Although I made a simple blackberry ginger syrup, I also tried the recipe another way, and it’s still just as delicious.
Ginger Blackberry Bellini
Ingredients
For Simple Syrup
- 1 cup of blackberries
- 1/2 cup of water
- 1/3 cup of brown sugar (can use less)
- 1 1/2 inch of fresh ginger washed thoroughly and grated
- 2 prints of fresh thyme washed
For the Cocktail
- 1 bottle of Prosecco or Champagne
- 1/2 cup of blackberries (for garnishing)
- A few springs of thyme (for garnishing)
Instructions
- Place a small saucepan on medium-high heat, combine Blackberries, ginger, thyme, water, and sugar — bring to a simmer. Reduce heat to low and frequently stir as blackberries break apart — approximately 15 minutes—strain syrup with a fine-meshed sieve Into a mason jar. Place in refrigerator overnight.
- Add two tablespoons into a champagne flute (Play around with the amount of syrup to the level of sweetness you’d like) top off with prosecco or champagne or your favorite sparkling wine, add two blackberries and a spring of thyme to garnish.
Or try it this way
- In a blender or bullet, combine blackberries, ginger (no need to grate), thyme, water, and sugar—strain mixture with a fine-meshed sieve Into a mason jar. Place in refrigerator to chill.
- Add two tablespoons of mixture to champagne flute (again play around with the amount — how much is based on your preference of course), top off with Champagne or Prosecco or your favorite sparkling wine — garnish with two blackberries and a spring of thyme.
I used champagne but can’t wait to try with my favorite Prosecco. The recipe above serves four.
