A lot of restaurants advertise themselves as a Caribbean Fusion Eatery however when I look at the actual menu I’m often disappointed to see Chicken & Waffles as the main feature on the menu – ok people I’m gonna say Chicken & Waffles isn’t a Caribbean dish, no not at all…not one bit.

Caribbean Fusion to me means you’re offering a spin on traditional Caribbean dishes, that is one of the reasons I love this pie from Zurilee Brooklyn. Bake & saltfish (codfish) is a traditional Caribbean breakfast and Zurilee this is an absolute WIN – you’ve crushed it…
