Brooklyn, are you ready to experience a Globally inspired menu? Get ready, summer 2017 Timon Balloo’s, Miami based eatery – Sugarcane Raw Bar Grill will call Brooklyn home.
Trinidadian born, Chef Balloo who is of Chinese and Indian descent and raised in San Francisco is ready to expand to Dumbo Brooklyn – with a location in midtown Miami (which opened eight years ago) and recently opened Las Vegas location at The Venetian Hotel. Sugarcane currently features an extensive diverse menu of small and large delicious plates based on three kitchen concepts – an Open fire grill, raw bar, and a traditional kitchen, with culinary inspirations ranging from the Caribbean to the South Pacific. Brooklynites we can expect to experience the eatery’s current menu paired with handmade Artisan Cocktails, robust rum offerings and an energetic, yet laid back ambiance.
An 11,000-square foot former Civil War-era warehouse located at 55 Water Street will house the 300-seat restaurant with waterfront views of both Brooklyn and Manhattan Bridges – the transformation will include a 2,000 square foot outdoor patio of course, with views of the East River and Downtown Manhattan bordering Brooklyn Bridge Park.
Chef Balloo who cooked alongside Michelle Bernstein at Azul, is excited to have a National name and share his flavors around the country – he states “it is my chance to ask, “is my food all that?” Well, Chef Ballo, I believe you’re coming to the right place to have that questions answered and we are excited to have you as a new addition to our diverse culinary experience here in Brooklyn.
